Introduction :
Most grilling methods have a very
clear disadvantage : the food is
cooked on one side at a time, so
you have to turn it after a while. Single-sided cooking also
means that the pores of the food are only closed on one side,
so that the juice- and therefore much of the Nutritional
Value escapes from the top until the food is turned over.
This effect, which can be observed in a pan as well as on a
frying, grill or griddle plate, leads to loss of weight of up to
15%. The same is true for radiation heat from infra-red and
or radiant heaters. The pores are not close immediately, and
the food needs to be turned after a while.

Contact grilling eliminates the above
disadvantage as the food is cooked
simultaneously by both top and bottom
hot plates ( hence the term DUAL
CONTACT ).
This immediate searing process will
close the pores and therefore, retain the
natural juices, nutrition and flavour.
Depending on the food, the loss of
weight is greatly reduced (only 3%), compared with conventional grilling methods.
Cooking takes less than a third of the normal time in a frying pan or saucepan, because the heat
resulting steam can hardly escape at all. Instead, the expansion pressure pushes the steam back
into the food, which considerably speeds up the cooking process. Not just meat, but also fish,
poultry, frozen food, bread, toast, etc. can be cooked in a fraction of the normal time. And faster
cooking speed combined with better quality means that your kitchen will be more efficient.
